Raw Honey is unfiltered & harvested in micro batches which retain all of the pollen, antioxidants & amino acids that are lost in large-scale produced honey. Raw honey will crystalize, to re-liquify place jar in warm water. Never microwave.

New England Cranberry
Tasting Notes: Sourced from New England Beekeepers where bees forage on the Cape Cod cranberry bogs. Harvested after pollination is finished at the end of July, honey is a light amber color, buttery on the tongue with flavor that oozes tart red cranberries, warm cinnamon spice, brown sugar & dried plums.
Pairings: drizzled on warm brie with whole cranberries and pecans, or drizzled on acorn & butternut squash, as a honey glaze & spread on pumpkin or spice bread.
Japanese Knotweed
Tasting Notes: A dark, robust color, with an earthy, nutty, sweetness harvested in late summer/early fall when bees forage on this tall towering bamboo like plant which offers a rich source of late season nectar.
Pairings: This honey stands well on its own or pair with cheddar cheese, as a maple syrup substitute drizzled on hotcakes, waffles & crepes or chocolate hazelnut gelato. Often used in baking. Makes a great marinade: mix honey with soy sauce, fresh ginger & garlic.
Orange Blossom
Tasting Notes: Sourced from bees harvesting sweet nectar from Florida Orange Blossoms. Delicate, nearly white in color with a fruity floral flavor.
Pairings: drizzle on cheese, yogurt, bananas. Pair with white wine.

Tasting Notes: A light, golden honey harvested early summer when bees forage on fruit trees such as apple, pear, cherry blossoms, clover, spring flowers & our own garden herbs.
Pairings: Drizzled over cheddar cheese served with freshly sliced apples or spread over tahini with sesame seeds or mix into a honey mustard dressing.
